Candid Peel

 I’m baking a lemon drizzle cake as a birthday cake. It will need a bit of glamour, so what better way than to add lemon candid peel.

I’m making a lot, so I can jar up the left overs. 


I find using a vegetable peeler is much easier.


Slice thinly.

Pop into a pan of cold water, bring to the boil for 30 seconds. Repeat this process. 
This process reduces the bitterness of the peel.

Next stage add sugar, 2 or 3 spoonfuls depending on the amount of peel. 
Bring to the boil, add your peel and simmer for 30minutes.


Final stage coated with sugar and left to dry out.
Drying the peel can take up to 48 hours.

The finished cake and Ive lots of candid peel to be jarred.
